This is a limited edition from Jairo Arcila. Only 40 bags of 250g are available on our website. We will roast and fulfill orders december 6th.
This lot was produced by Jairo on his Villarazo farm. It is a pink bourbon that followed a natural anaerobic process. It is a sparkling, bright coffee that had its flavors' intensity boosted by the process. If you had our coffees from Luz Mejia or Luis José Valdez before, you will be familiar.
The anaerobic process is very similar to what happens in wine. In this case, whole cherries are rinsed and left for a first fermentation in open tanks. Then they are put un sealed bags for 48h. This second fermentation without oxygen forces yeasts and bacteria naturally present in the cherries to work harder and develop further, more intense flavors.
