2022 is the 5th year that Structure Coffee Roasters exists! As part of the celebration, we roasted a treat. As with all coffees, we’ll fill you in on some information. But we’d also like to take the opportunity to thank you for your support over the last couple of years.
This limited edition is a small production from Jesus Salazar. Jesus founded Cafeologo, now an institution in Chiapas, Mexico, that is dedicated to create the human, material and economic conditions to maximize the expression of the coffees they work with. Dubbed ‘lot No 16’, it was processed at the community’s wetmill of San Pedro Cotsilam.
For us, selecting this lot is quite meaningful. We have been working for 5 years on this business with intent at building something whole and genuine. It only makes sense to offer you a coffee that has been made in the same way from the beginning.
It is a natural process where whole cherries are fermented for 96 hours in breathable tanks. Albeit a blend of varietals (Garnica, Bourbon and Caturra) and extended fermentation, we were amazed by the clarity and cleanliness of this coffee. Expect great sweetness and flavor intensity off of this one.
We taste clean and complex notes of black tea and apricot.
