Tasting notes: Praline, Quince jam

Daniel Muñoz’ coffee story is an interesting one. His background is in sugar cane farming and panela manufacturing. Panela is a sweet treat exceedingly popular in Colombia. Think of it like maple sugar. Yet, he grew an interest in coffee and specifically in high quality coffee.He bought his farm, Villa Camila with the idea of growing exclusively pink bourbon and gesha varietal. For the last ten years he has been improving his quality, becoming renowned for his lots. 

This washed pink bourbon is an outstanding example of his work. Picking happens every three weeks to select the cherries at peak ripeness. The process that follows keeps the quality and deliciousness of peak ripeness. That is because for every one at Villa Camilla, quality is a vehicle for improvement of life. To quote his wife Nayu :“We have to have a life with purpose, we have to take care of the environment, we have to improve our quality of life, we have to commit ourselves 100% to quality, we have to share what we learn and do.“

We taste notes of Praliné and a sweet acidity reminding us of Quince Jam.
