This is one of the rare decaf coffees that are a success. On a blind tasting, we can’t tell it was decafeinated. Coming from the Cauca region of Colombia, it is treated following the sugar cane process at the Descafecol plant. There they use local sugar cane and source water to treat the coffee.

The roast profile is quite developped. In espresso, its body is silky and arbors notes of chocolate. This being said, we really enjoy it as filter too. As such it veers towards flavors of dulce de leche and milk chocolate.

Our first Ethiopian coffee comes from the town of Aleta Wendo in southern sidama. In line with Ethiopian customs, farmers deliver coffee cherries at the washing station located in town. Therefore, we named this coffee after the city where it is transformed. Being close to Yirgacheffe in the gedeo zone, the cup profile is quite similar: powerful, floral and delicate. More specifically, you will find aromas of jasmine, honey and peach.

For our 1st anniversary of our coffee shop at 460 McGill and 2 years of roasting, we are delighted to offer you this coffee from Luis José Valdez. This is a superb and exotic coffee processed by an exceptional farmer. Luis grows this pink bourbon variety with care. He will check the sugar levels in the cherries to ensure an optimal ripeness at harvest. He then ferments the cherries for 12-15h before depulping and proceeds to an anaerobic fermentation of 48h under temperature control. The beans are then sent to drying as is. This makes a honey process with a controlled fermentation. The result are powerful notes of strawberries and cream as well as a delicate and elegant acidity.

We strongly believe that transparency in the coffee industry is a dire need for sustainability of farms, roasters and cafés. With this in mind and from now on, we will publish the free on board (F.O.B.) prices of all our coffees. In this case : F.O.B. 3.80 USD/lb (paid 313.5% above market price).

For the first time we will be featuring a coffee from Tanzania. Our new african coffee comes from 230 farmer strong coop in the villages of Iyula. They’ve been growing kent varietals since 1938. The clay soils to be found in this region and the semi-dry climate represent an important challenge for the farmers. They farm in organic ways and local compost is used more and more. Special care is being put in the washing process. Many steps of sorting and a density separation, result in a cup of exceptional clarity.

The outcome is spectacular. These harsh growing conditions and special care produce a richer and flavourful coffee. You’ll find notes of sponge candy and canary melon.
