You may notice that unlike most of our single origins, this coffee is not named after a single farmer. This is because it comes from a cooperative of producers at CAFEUNO. It is made up of 10 cooperatives and 120 producer members, who have common struggles and dreams. Their hard work, hope, and, most importantly, community, help them persist through the setbacks that occur, such as the coffee rust disease, which hit their area in 2012.
This lot is a collaboration of 11 farmers, including William Alexander Romero Gradiz who manages the cooperative.
It means something to us to offer this coffee as we also work in a collaborative environment. We roast the beans at the Canadian Roasting Society, where plenty of small roasters share space and expertise to grow alongside one another.
We taste warm notes of caramel, pecan, and applesauce. A gentle cup, perfect for a chilly start to spring.
