Hubert Nicolas Lopez was born and raised among coffee culture and he always knew he wanted to be a coffee farmer. After graduating in Agricultural Engineering, he seized the opportunity to be part of the first cupping certification school in Honduras, then worked for the IHCAFE (Honduran Coffee Institute) and became a reference in cupping and quality assessment in the country.
Besides this, he inherited his first farm, Finca La Pila and later half of Finca Tatascan and bought the other half, where he is able to work on producing high quality specilaty coffee.
Benefiting from his solid experience, he was able to open his own cupping laboratory with his wife Merlin, who is also a coffee producer. They now are the primary cupping partners for HCA, Structure's partner on importing coffee from Honduras.
We've had the opportunity to meet Hubert and his wife and it makes us really proud to strenghten this partnership by roasting their coffee.
