Jorge Serrano is a third-generation Honduran coffee farmer. In 2011, he founded Tierra de Leyendas ("Land of Legends") on land once degraded by cattle grazing and sugar cane cultivation. Through patient restoration, he replanted native trees, brought back forest cover, and transformed the property into a thriving ecosystem. Today, half of the farm is a protected nature reserve.
The farm supports 30 full-time employees and over 120 seasonal pickers during harvest, all paid above-average wages, uses an ecological depulper that cuts water consumption by 90%, and fertilizes entirely with organic Bocashi compost (made from the recycled coffee pulp).
For the past few years, Jorge has been experimenting with honey and natural processing, and gradually replacing the Lempira variety by the Parainema, known for its resilience against coffee leaf rust. The honey process delivers a cup with more body and character than a traditional washed coffee, yet beautifully balanced, a genuine pleasure in both filter and espresso.
