Tasting notes: Persimmon, Fig, Honey

Jose grew up in a coffee farming family, but he first left home at a young age and worked all over Colombia as a bus driver. For years, he travelled across the country before finding his way back to his roots. Two decades ago, he bought, from his father, the farm El Casino, nestled in the municipality of Palestina, Colombia.

Today, with his wife Francy, they manage 10 hectares of coffee plants, spread across two farms : El Casino (7 ha) and Cruz de Amor (3 ha), where Pink Bourbon and Caturra are the main varieties grown. Their annuel production reaches around 25 000 kg, a growth that made the construction of a new washing station necessary last year.

Fun fact, Jose and Francy are true animal lovers who have taken in dozens of abandonned dogs over the years. They currently live with 17 faithful companions who roam freely across their land.

The Pink Bourbon variety is famous for its fruity profile, and this coffee is no exception, with sweet and honey like notes of orange fruits, as persimmon. We recommend brewing it as a filter, wether pour-over or drip machine.
