Tasting notes: Tonka bean, Marmalade, Spiced Rum
Honduran coffee season is back and we are glad to offer Maria's coffee for the second year !
Originally from Tegucigalpa, María Dolores discovered coffee after moving to the Honduran mountains with her husband, Juan Adolfo Bautista. Inspired by a meeting of women producers organized by the COMSA cooperative, she founded Finca Mini Granja Dilma in 2016, a sustainable ecosystem where she also grows vegetables, raises animals and produces her own organic fertilizer. Today, she is an inspiring leader for women producers in the region and a pioneer of specialty coffee in Honduras, working with her family on high-end microlots through innovative fermentation and solar drying techniques.
One of Maria's greatest accomplishments this season was achieving better fruit maturation despite increasingly difficult weather, a result of consistent farm management. Like many Honduran producers, her greatest ongoing challenge is climate change, which demands greater attention throughout the production cycle.
This natural coffee keeps its strong personality with notes of tonka and marmalade and a complex finish of spiced rum!
