Ture Waji as a renowned producer in his region as he has been managing farms there for decades and has acquired an immense knowledge about the land, its people and of course, coffee ! His presence and experience have earned him the nickname of "King of Guji" and his name might ring a bell as Tima is the second coffee we buy from him.
However, since he created Sookoo Coffee, production has been mainly focused on natural processing and Tima is novelty as it is one of his first two washed coffees.
Usually, Ethiopian coffees are a blend of several varieties (heirlooms or landraces) as the beans come from different farms, but this lot stands out for its exemplary traceability and allows us to know precisely the varieties that compose it : Gibirinna 74110 and Serto , two varieties selected in the 1970s for their disease resistance, and today among the most cultivated in Ethiopia.
Ideal for pour-over or filter, Tima reveals floral rose aromas enhanced by the liveliness of bergamot. A light and satiny cup, perfect to wake you up gently or to enjoy a beautiful sunny summer afternoon.
